Chef on the Rocks Recipe: Casarecce con pancetta in padella
Hello, everyone! This is the first of many recipe installments from yours truly, Chef on the Rocks! Casarecce con pancetta in padella is one of my favorite dishes that I’ve concocted. It’s quick, easy, but most of all, it’s delicious.
What You’ll Need for Casarecce con pancetta in padella:
- Fresh Parsley
- (1) Package of Pancetta
- (1) 12 oz. bag of Casarecce pasta. If you can’t find this type of pasta, Penne would work as well.
- Minced Garlic
- Black Pepper
- Romano Cheese
- Olive Oil
Cover the bottom of a larger sized frying pan with olive oil and turn your burner on low-medium heat. Allow olive oil to heat up. As the oil is heating up, put your water into your pasta pot to start heating the water to boil. Be sure to salt your water that you will be cooking your Casarecce pasta in. Remember this when salting your water: “Salty as the sea”. Chop up two hand fulls of the fresh parsley, and put it aside. Once your oil is heated, put the fresh parsley, pancetta, two tablespoon of the minced garlic, and a teaspoon of black pepper into the hot olive oil. Stir around with a spoon until the garlic looks to be golden brown. Once the garlic is golden brown, take the frying pan off of the heat and set it aside. It should look similar to this when it’s ready to come off of the heat:
Once your water is boiling, place your pasta into the water. Boil the pasta and remove from heat just before it’s al dente. Strain your pasta, while saving about a cup or so of the water that the pasta was cooked in. You’ll need that later. Place your frying pan that has all of your seasonings and pancetta in, and place it back on medium heat. Stir the strained pasta into the frying pan. Pour the cup of saved pasta water into the pan, chop up another handful of fresh parsley and add it along with your Romano cheese. The amount of cheese will come down to your taste buds. Personally, I like to use a generous helping of it. See picture below:
Stir all ingredients in the pan until it is well mixed. Cook over medium heat for about 5 minutes, or until pasta is cooked to al dente. Remove from heat, plate and enjoy.
